Basic beer brewing procedure:

To sanitize

  • Cover all surfaces with diversol solution
  • Let sit 10 mins
  • Rinse with water

Notes

  • 9L is about an inch over the stir spoon bowl
  • 23L is right at the inner lip

Day 1

  • Sanitize pail #1
  • Put almost 23L in and let it sit overnight to get rid of chlorine

Day 2

  • Sanitize pail #2, syphon, spoon, hydrometer and thermometer
  • Put extract in hot water to melt
  • Boil 2L of water in pot
  • Let boil for 15 mins
  • Add extract (not while over heating element)
  • Add 1kg corn sugar (not while over heating element)
  • Stir until fully dissolved
  • Let boil 1.5 mins
  • Add 9L water from pail #1 to pail #2
  • Add wort mixture
  • Top up to 23L from pail #1
  • Let temperature of mixture fall to 23C
  • Syphon in to hydrometer beaker (1.5" from top)
  • Record specific gravity
  • Sprinkle yeast packet on top of mixture
  • Put lid loosely on pail #2

Day 3

  • Confirm fermentation (8 to 24 hours after putting on lid)
  • If no signs of fermentation, add yeast

Day 4

  • Confirm fermentation

Day 5 or 6

  • Sanitize syphon, carboy, air-lock
  • Take another specific gravity reading
  • Transfer to carboy
  • Add air-lock
  • Wait a week or two

Day 14 to 20

  • Sanitize pail #1, syphon, spoon, bottles
  • Add 3/4 cup corn sugar to 1 cup water
  • Boil mixture in small pot for 2 minutes
  • Put mixture in pail #1
  • Allow to cool a bit
  • Transfer beer from carboy to pail #1
  • Stir gently
  • Transfer to bottles
  • Wait 6 days

Day 20 to 26

  • Relocate bottles to cold location
  • Wait at least 1 week (2-3 weeks is better)
  • Drink beer
